In addition to the replies you have already received, it is helpful to start with knowledge of the variety of lemons, oranges, grapefruits. They are not all ready to harvest at the same
time. If you have knowledge of this, you could consult the calendar in our publication on citrus varieties [AZ 1001] at  http://ag.arizona.edu/maricopa/garden/html/pubs/pubs.htm
And don't expect color to be an indicator, as it is impacted by the amount of cold we experience.

Ultimately, as Ursula notes, the true test is sample and taste.
