The Biology / Microbiology summer internship at Hickman’s Family Farms would be broken up into two areas of learning. Sampling, and in-house laboratory testing for both finished products at our “ready to eat” facility and environmental testing for pathogens in the layer houses.

The intern will learn the regulatory requirements for the Shell Egg and Processed Egg products ensuring they are safe, wholesome, and properly labeled and packaged.

The intern will be trained by both the Compliance Manager and Certified Quality Assurance Technicians. You will receive on-the-job training in areas such as sanitation requirements, quality assurance programs, finished product specifications, Certificate of Analysis, Micro testing for Salmonella, Listeria, E.coli, yeast and mold, and total plate count. (TPC)

At the end of the summer the student will give a brief presentation on how they interpret the findings to the company compliance manager.

Qualifications: You need to have successfully completed at least 12 semester hours in courses such as food science, nutrition, microbiology or biology and be a student interested on the emphasis of microorganisms and how they interact with the environment and host organisms.
