Growing Medicinal Mushrooms

Barry Pryor received a UA Green Fund award to develop systems for recycling landscape and consumer waste products as substrates for growing gourmet and medicinal mushrooms. Current efforts are focused on growing oyster mushrooms on mesquite beans and/or coffee grounds generated on campus as part of a UA commitment to creating a more sustainable university.
